White Bean, Feta & Grilled Pepper Wrap

This is a great vegetarian wrap that everyone likes. We make it on our guided tours!

Ingredients

4 grilled peppers (app. 6 in a jar), roughly chopped
2 clove garlic (fresh or pressed in jar), finely chopped
1 pot basil, fresh, tear into pieces
1 lemon, just the zest, 1-2 tsp for 4 portions
0.5 tsp chili flakes
3 tblsp olive oil
1 tsp salt, add to taste
1 pack feta cheese, crumbled
8 leaf greens, romaine lettuce (app. 8 leaves in one head), can be excluded
200 gram walnuts, crumbled
4 liba bread mediterranean style flatbread, large (come in pack of 4), can be substituted for tortillas

Tips!

The bean mix will be similar to hummus. Dip crackers or liba bread. You'll have grilled peppers left-over, good for Creamy Fusilli Salad towards the end of your trip.

Instructions

  1. Roughly mash the beans with a fork. Add peppers, garlic, basil, lemon zest, chili flakes,salt and oil and mix. Add feta. Taste and adjust.
  2. Portion romaine, bean mix and walnuts on the tortillas. Fold in the sides and roll up wrap.
  3. Cut in half when ready to eat.
