Hummus & Herbacious Veggie Wrap
It's getting towards the later days of your trip and a lot of ingredients are off the table. This is a yummy vegan wrap with lots of herby flavour from the chimichurri!

Instructions
- Spread hummus onto each tortilla, leaving a small border around the edges for easier rolling.
- Add carrot, red onion, grilled peppers, mixed beans and walnuts in a line down the center of each tortilla. Add a little salt & pepper and a generous drizzle of chimichurri on top.
- Roll up!
