Hummus & Herbacious Veggie Wrap

It's getting towards the later days of your trip and a lot of ingredients are off the table. This is a yummy vegan wrap with lots of herby flavour from the chimichurri!

Ingredients

4 tortillas, large (6 in a pack)
2 tub hummus, original
2 carrot, cut into thin sticks
1 red onion, thinly sliced
2 grilled peppers (app. 4 in a jar), cut into strips
2 can beans, mixed beans, drained and rinsed
salt
black pepper
0.5 tub chimichurri
1 bag walnuts, crumbled

Instructions

  1. Spread hummus onto each tortilla, leaving a small border around the edges for easier rolling.
  2. Add carrot, red onion, grilled peppers, mixed beans and walnuts in a line down the center of each tortilla. Add a little salt & pepper and a generous drizzle of chimichurri on top.
  3. Roll up!
