Italian Pasta Salad with Salami & Mozzarella

Pretty straight-forward flavours that everyone knows. Prepare your pasta salad in the morning before setting off.

Ingredients

1 pack pasta, fusilli
4 tblsp olive oil
3 tblsp red wine vinegar
2 clove garlic (fresh or pressed in jar), finely chopped
2 tsp honey
0.5 tsp basil, dried
0.5 tsp oregano, dried
1 pack cherry tomatoes, fresh, halved
0.75 pack whole long-lasting sausage, salami or Swedish juniper smoked, cubed in 1 cm pieces (can be substituted for pre-sliced salami)
3 pepper grilled peppers (app. 6 in a jar), chopped coarsley
0.5 red onion, fine dice
2 pack soft cheese, mozzarella, cubed in 1 cm pieces
0.5 jar olives, black, kalamata, coarsley chopped
0.5 pot basil, fresh, chopped

Tips!

Instructions

  1. Boil pasta. Toss with a little olive oil and let cool.
  2. Whisk all the ingredients of the vinaigrette in a small bowl (oil, vinegar, garlic, dried basil, dried oregano, honey, salt & pepper).
  3. Add tomatoes, salami, grilled peppers, red onion, mozzarella, olives and fresh basil to the pasta. Pour the vinaigrette over the top and toss well to coat.
  4. Taste, then season with salt and pepper as needed.
