Creamy Fusilli Salad

Long-lasting ingredients. Easy to make variations to use up left-over ingredients. Make before you set off in the morning. Great to have with some whole long-lasting sausage like salami or "Swedish juniper smoked".

Ingredients

1 pack pasta, fusilli
150 ml mayonnaise
1.5 tblsp red wine vinegar
0.75 tblsp sugar
0.5 tblsp Tabasco
0.5 clove garlic (fresh or pressed in jar), finely chopped
1 to taste salt and pepper
2 grilled peppers (app. 6 in a jar), drained and medium dice
0.33 jar olives, black, kalamata, medium dice
0.25 jar pickles / gherkins, sliced, fine dice
0.5 each red onion, fine dice
0.34 tub roasted onions
1 pack whole long-lasting sausage, salami or Swedish juniper smoked, exclude for vegetarians

Tips!

Well this is what your left-overs from previous days go into. For example: grilled red peppers from White Bean, Grilled Pepper & Feta Wrap, roasted onions from Roast Beef & Potato Salad Wrap. Make sure to use up some pickles, olives and mayo during previous days.

Instructions

  1. Boil pasta. Toss with a little oil and let cool.
  2. Mix the mayonnaise, red wine vinegar, sugar, tabasco, garlic, 0.5 teaspoon salt, and 0.5 teaspoon ground pepper in a small bowl.
  3. Pour the dressing over the macaronies. Then add the chopped roasted red peppers, black olives, pickles, and red onions. Toss. Taste and adjust. It's supposed to be both sweet and tangy.
  4. Top with roasted onions when serving. Serve with sliced long-lasting sausage if you like.
