375 gram rice, long grain (comes in 125 g boil-in-bags, 4 bags in a pack), cooked and cooled
1 red onion, fine dice
4 grilled peppers (app. 4 in a jar), medium dice
2 rib celery, fine dice
2 carrot, fine dice
1 tub chimichurri
3 tblsp water
salt
black pepper
1 pack whole long-lasting sausage, salami or Swedish juniper smoked

Instructions

  1. Put the rice and all the vegetables in a bowl. Drizzle with chimichurri (you may not need all of it) and use two forks to combine, fluffing the rice and tossing gently to separate the grains. Taste and adjust with salt & pepper and maybe a little more chimichurri.
  2. Serve with sliced whole salami if you want some meat with it.
