Ingredients

1 tblsp olive oil
1 yellow onion, fine dice
1 aubergine, cubed in 1.5 cm pieces
4 clove garlic (fresh or pressed in jar), finely chopped
salt
black pepper
200 ml ajvar relish
1 tub creme fraiche 34%
2 tblsp tomato paste
0.5 jar olives, black, kalamata
1.5 pack pasta, fusilli

Instructions

  1. Fry aubergine and onions in oil until the aubergine becomes golden brown. Add garlic, fry another minute. Season with salt and pepper. Add ajvar relish, creme fraiche and tomato paste. Simmer on low heat 10 mins.
  2. Add tomatoes and olives and simmer for another couple of mins. Taste and adjust.
  3. Boil pasta. Mix with sauce.
