Classic Root Vegetable & Sausage Stew

This is a fantastic traditional one-pot wonder with very classic Swedish flavours. Root vegetables, allspice, bay leaves, sausages, beer! It's a perfect dish for your third or fourth dinner.

2 pack Sausages, mixed already cooked e.g bratwurst, kabanoss, lamb
1 yellow onion
3 parsnip
2 carrot
0.5 pack potatoes (app. 12 medium potatoes in bag)
8 sprig thyme, fresh
1 pack parsley, fresh
10 allspice berries
2 leaf bay leaf
salt and pepper
1 can beer
1.5 pack fond du chef chicken (concentrated chicken broth)
800 ml water
4 tblsp mustard, Swedish hot & sweet
4 slice left-over bread if you have it

Tips!

Instructions

  1. Cut sausages in pieces on a slant. Wedge onion. Cut parsnip, carrots and potatoes in pieces (appr 2-3 cm).
  2. Layer sausage, veggies, allspice and bay leaf in a large pot, salt & pepper between each layer. Make a buquet of parsley and thyme and stick in the middle (save some parsley for garnish). Add beer, fond du chef chicken and water, so the veggies and sausage are just covered.
  3. Bring to a boil, then simmer until root veggies are soft.
  4. Sprinkle chopped parsley on top and serve with coarse mustard and bread.
