Chorizo & Chickpea Stew

Serve with express rice, since it's so easy and comes in good portion sizes. You can use regular rice also. Conserved cherry tomatoes are great for stews with a sweeter and deeper flavour than regular chopped tomatoes.

2 tblsp cooking oil
1 pack sausages, spicy chorizo (pre-cooked), cut on the slant in 1 cm pieces
2 clove garlic (fresh or pressed in jar), finely chopped
1 each red onion, fine dice
1 red bell pepper, medium dice
1 tblsp paprika, ground
1 can tomatoes, canned whole cherry tomatoes
1 tsp soy sauce

Use in Breakfast Burrito with scrambled eggs.

Instructions

  1. Brown chorizo with garlic in some oil, 2 mins. Remove from frying pan. Add more oil and onions, peppers and spices, fry a few mins. Add cherry tomatoes and soy, simmer for 15 mins. Add some water if needed.
  2. Add chickpeas and chorizo/garlix mix and simmer for 5 mins. Add lemon juice, taste and adjust.
  3. Make express rice. It's cooked already and only needs reheating. Add a couple of tblsp of water to a frying pan or pot and heat while stirring.
