Classic Paneed Cod with Lemon Dill Sauce and New Potatoes
This is great Swedish dish for your first evening. We make it on our guided trips! Cod comes in a 400 gram pack, so suitable for groups from 4 persons and up. Or make some extra for a "kavring" sandwich for lunch next day, We only have sustainable MSC certified cod on the food order.

- 800 grams new potatoes
- 200 ml flour
- 300 ml breadcrumbs
- 0.5 tsp salt
- 0.25 tsp white pepper
- 2 each eggs whisked
- 600 grams frozen cod, 400g per pack defrosted
- 4 tblsp oil
- 4 tblsp butter
- 1 each lemon
- 200 ml creme fraiche light 13%
- salt and pepper
- 0.25 bunch dill (can be excluded) chopped, 1 tblsp
- 1 bag mixed lettuce, 150g
- 1 pack dressing mix, Herb garden
- 3 tblsp olive oil
- 3 tblsp water
Boil new potatoes.
Sauce. Zest half the lemon, mix with creme fraiche, salt and pepper. Add lemon juice from half the lemon and dill. Taste and adjust.
Mix flour, breadcrumbs, salt & white pepper in a plastic bag. Pour into a bowl. Whisk eggs in a separate bowl. Pad cod dry and then dip in eggs and then breadcrumb mixture. Fry in rounds in frying pan in butter mixed with oil, appr 3 min on each side.
Mix dressing mix with oil and water, toss with salad.
Serve paneed cod with sauce, new potatoes, salad and wedges of the other half of the lemon.
