Pasta with Aubergine & Ajvar Relish
Ajvar relish is a flavourful grilled pepper & aubergine relish that can be used in all sorts of dishes or as a side condiment.
Servings: 4 people
- 1 tblsp olive oil
- 300 grams aubergine cubed 1.5 cm pieces
- 1 each yellow onion finely diced
- 5 cloves chopped garlic, or garlic paste
- salt and pepper (free of charge section)
- 200 ml ajvar relish ('oil, condiments & pastes' section)
- 200 ml creme fraiche light 13%
- 1.5 tblsp tomato paste
- 150 grams black olives, kalamata
- 2 each tomatoes diced
- 320 grams pasta, penne
Fry aubergine and onions in oil until the aubergine becomes golden brown. Add garlic, fry another minute. Season with salt and pepper. Add ajvar relish, creme fraiche and tomato paste. Simmer on low heat 10 mins.
Add tomatoes and olives and simmer for another couple of mins. Taste and adjust.
Boil pasta. Mix with sauce.
